Really enjoyed Neepawa cabin and looking forward to coming back. Fishing was great and we ate like kings! Speaking of eating, I am thinking about opening a restaurant here in my hometown of Chicago...a restaurant specializing in Canadian quisene. We have plenty of Chinese, Italian, Tai, Mexican, Japanese, French, Greek...and hell we even have a Kenyan restaurant right down the street! But no Canadian restaurants. I will have the only one....I'll corner the market!
So, I was wondering if you could give me some tips as to what to put on the menu? I was thinking about hamburgers, ribs, hot dogs, mashed potatoes, and..of course...fish. My featured desert would be apple pie.
Perhaps you could send me a recipe or two. I really could use your input!

Kai, I can confirm the said walleye tax Braxton mentioned. The tax will start being levied on May 18th, 2019. According to legislation, for US citizens passing from Canada to the US, a tax of one loonie per FILLET will be collected at the border for walleyes under the slot. The tax for trophy walleye fillets will be a toonie. From what I was told, many anglers may consider gutting their fish boat side and then cutting the fillets out after they cross the border, since legislation does not define a "fillet." This would save the fishermen a loonie or a toonie per fish. The enforcing jurisdiction (OPP) is aware of that loophole and sources indicate they may request the law be changed to a "bone" tax, which would charge per bone instead of per fillet if fillets have not yet been cut. Fear of long border crossing lines may delay enforcement, and employing bone counters at border crossings may not be in the federal budget. Which country would pay for the bone counters is also up for debate, as it was not NAFWA (North American Free Walleye Agreement).
